Meat
Cook 5 pound pork roast in a slow cooker for 8 hrs on low with 1 medium onion . Remove bone, and fat then shred meat using two large forks. Strain Broth to remove all the small bits and retain broth. Once the broth cools remove top layer of fat. Lightly brown the shredded meat in a large skillet
Add Fiesta brand tamale seasoning https://www.fiestaspices.com/product/tamale-meat-seasoning/ and enough water (about 7-8 cups), cover and cook on low for 30 minutes. Remove the meat and put in a metal columnar to drain the excess moisture and let the meat cool.
Masa
- 6 cups of masa flour
- 4 cups unsalted chicken broth
- 1-2 cups of water (stop adding when it looks like butter or frosting, no clumps)
- 1 lb lard
- 1 tsp baking powder to make it fluffy
- 1 package of Fiesta brand masa seasoning
Masa (Sandra Vasquez from Youtube)
- 1 four pound bag Masa flour
- Broth or water 1 gallon
- 1/4 cup Garlic powder
- 1/4 cup Baking powder
- 1/4 cup Red Chili powder
- 1/4 cup Salt
- 4 cups of Lard or oil
Directions
Add flour to water and mix. Add Chili powder, salt, garlic power to Lard. Then add to masa flour. Then add baking powder
Tamale Meat
Cook 1.5 to 2 hours
Tamale meat Seasoning
Chili ancho, 1 pepper per pound, remove seeds and stems them rehydrate low heat water, don’t boil.
Cumin ½ tsp per pound
Black pepper course ½ tsp per pound
Fresh garlic, 1 clove per pound or ½ tsp powder
Blend together and strain in Spaghetti strainer to get out large chunks. Add to meat.
Mexican Rice
1 tbsp oil
¾ cup rice
1 tsp onion powder
1 tsp garlic powder
Pinch of oregano
½ tsp cumino
1 tbsp chicken bouillon
⅓ cup of tomato sauce
2 cups unsalted chicken broth
Brown the rice
Pour in the tomato sauce and stir
Pour in heated broth, heat the broth so the rice won’t get mushy
Pour in spices, cover and cook for 10 minutes on medium low. Don’t stir or open the lid or the rice will get mushie
Small batch for two people:
- 1/2 tbsp oil
- 3/8 cup rice (6 tbsp)
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- Small pinch of oregano
- 1/4 tsp cumin
- 1/2 tbsp chicken bouillon
- 2 2/3 tbsp tomato sauce
- 1 cup unsalted chicken broth

Ingredients
1 pound light brown sugar
1 cup heavy whipping cream
1 tsp vanilla extract
2 tablespoons light corn syrup
1 tablespoon butter
2 cups chopped toasted pecans
Directions
In a deep, microwave-safe bowl, mix together brown sugar, whipping cream, nuts and corn syrup. Microwave on High for 5 minutes, stir then microwave 5 to 8 more minutes.
Mix in butter until well blended. Then stir, stir, and stir until mixture begins to cool and get creamy. Drop by tablespoonfuls onto waxed paper to cool.
